San Huevo lleva el huevo al centro de la mesa en La Plata

Frente a un edificio de ministerios en el centro de La Plata, la fila comienza antes de las ocho de la mañana. La(cm)Corresponding diners are heading toward a small restaurant with an orange-and-white facade, where every dish is built around a single ingredient: the egg.

Un método que busca eliminar la variación

The kitchen's distinguishing technique is pressure steaming. Three scrambled eggs are ready in less than thirty seconds, with a creamy texture and no added fat. According to the establishment, the method standardizes the dishes and reduces variation from one order to the next.

The menu includes nineteen savory options. The omelettes come in four versions: ham and cheese, zucchini and ricotta, bacon and cheddar, or chicken and mushroom. The sandwiches are assembled on an egg tortilla and filled with smoked pork loin, cured ham, or a combination of zucchini, tomato and cheese. The avocado toast with scrambled eggs is the most requested dish.

  • Three egg options with ham and cheese, zucchini and ricotta, bacon and cheddar, or chicken and mushroom.
  • Sandwiches made with an egg tortilla and fillings including smoked pork loin, cured ham, zucchini, tomato and cheese.
  • A savory menu that also includes bowls, avocado toast with scrambled eggs, and pastries made without sugar or flour.

For the bread, the restaurant developed a whole-grain ciabatta using slow fermentation. It serves as a base without adding weight to the dish. The pastry selection includes muffins, alfajores and cookies made without sugar or flour, as well as a creamy cheese mousse with stevia and red berries, in the style of a protein cheesecake.

Prices vary depending on the format and accompaniments. A serving of steamed scrambled eggs with coffee costs 6,000 pesos, while the avocado toast with coffee costs 8,000 pesos. The sandwich with water is priced at 10,000 pesos, and the omelette with the restaurant's coleslaw at 13,000 pesos. The protein bowl with chicken, smoked pork, beans and ricotta costs 11,400 pesos, and the salmon toast with kale and avocado costs 14,300 pesos.

A local business in a changing market

The restaurant consumes approximately two thousand eggs per week and works with grade one white eggs. The context is notable: according to CAPIA, the chamber of poultry producers, each Argentine consumed about 398 eggs in 2025, more than double the figure recorded two decades earlier. A report from the Latin American Egg Institute places Argentina first in the global consumption ranking.

The proposal challenges the idea that fast food must necessarily offer a broad menu. In this case, the concentration on one ingredient allows the kitchen to experiment with different preparations, from steaming and frying to baking, while also addressing consumers who seek alternatives based on eggs. The result is a compact offering that covers breakfast, midday meals and snacks without abandoning the format of quick service.
